From the Highlands of Concepción de Ataco, El Salvador
High in western El Salvador sits Concepción de Ataco, a region known for cool mountain air, volcanic soil, and a long-standing coffee tradition.
Here, elevation and climate do something important: they slow down cherry development. That slower maturation allows sugars and organic compounds to build gradually, which translates to more layered, complex flavors in the cup.
Ahuachapán’s volcanic soils are rich in minerals, helping produce coffees with body and structure—especially when paired with careful farming and processing.
The Farm: Finca San Luis & Producer Luis Duarte

At the heart of Cedar Gold is Finca San Luis, a family-run farm led by producer Luis Duarte.
Farms like San Luis carry generations of coffee-growing knowledge—but they’re also navigating a rapidly changing landscape. Climate variability, disease pressure (like leaf rust), and economic realities have pushed producers to innovate without losing what makes their coffee distinctive.
Luis Duarte’s approach is a balance:
- Preserve traditional quality standards
- Adopt resilient, forward-looking varieties
- Invest in precise, small-lot processing
That last piece matters. Cedar Gold is not a bulk blend—it’s a carefully handled lot, where picking, sorting, and drying are all done with attention to detail.
