Natural Processed Coffee

Unlike most coffees, this new Cedar Gold is naturally processed.

That means the coffee cherry is left intact while drying under the sun—sometimes for weeks.

During that time: Sugars from the fruit seep into the bean. Flavors intensify and evolve, and the body becomes richer, heavier, more textured

It’s a slower, riskier process.

But when done right… it creates something unforgettable.

🌱 The Varietal: Built for the Future

Cedar Gold features the Centroamericano (H1) hybrid—a rare and intentional cross between:
1. Sarchimor — known for durability and structure
2. Rume Sudan — an Ethiopian heirloom celebrated for wild, complex aromatics

The result is a compact, resilient plant that produces a cup with depth, elegance, and unexpected character.

This isn’t commodity coffee.
